A great light dish for the fall and winter that reaps the benefits of the cancer-prevention property of broccoli.
Substitutions: For the preparation of the recipe, you can substitute some of the oil needed to saute the broccoli with vegetable broth.
Ingredients:
300g/10 ounces raw broccoli
4 garlic cloves
2 table spoons of olive oil
Fresh black pepper and salt
50ml/2 ounces vegetable broth
160g/5 ounces of pasta

Preparation:
1) Cut the broccoli heads only and wash.
2) Steam the broccoli for 12-15 min or boil in salty water for 8min. Drain
.
3) In a large flat sauce pan, sauté the garlic cloves (whole). When the garlic turns golden, remove the pan from the heat for a few seconds to cool off.
4) After 10-15 sec, return the pan on the heat and add the broccoli. Turn on e heat to high and add salt and pepper and sauté for 1-2 min.
5) Add the broth (2 spoons) and turn down the heat again. Cook for 4-5 min, mixing occasionally.
6) Turn off the heat and cover with lid
7) Cook the pasta in salted water. A min before you drain the pasta, use some of the pasta water (1 sauce spoon) to add to the broccoli sauce. Turn on again the broccoli sauce at this point.
8) Drain the pasta and add it to the broccoli and sauté on high heat for a few minutes to finish the dish. Add 1-2 spoons of extra virgin olive oil.
9) Serve immediately
