Cook the Salmon
Single side skinny salmon fillet (approximately 1lbs for 2 portions
One bunch of green onion and a spring of thyme
The juice of half lemon and peel of one lemon
Four garlic cloves
One cup of leaks washed and cut
One cup of white wine and enough water to submerge the fish
Rinse off fish make sure it’s skinned pat dry. Place one cup of white wine and 1 cup of water in shallow pan and bring to boil. Add the fresh thyme, lemon peel and juice, cup of leak, garlic and place the salmon, making sure it is submerged. Add salt and pepper to taste. Cook until fish starts to firm up – about 15-20min. Set the leaks and salmon aside.

Cook the Pasta and Make the Sauce
1 cup of your favorite pasta
1/4 cup of heavy cream
1/4 cup of Milk
2 tbs. Olive Oil
2 tbs. Parmesan cheese
salt and pepper to taste
Cook your pasta in a water with a spoon of olive oil and salt and pepper to taste.
In a small sauce pan place to tablespoons of olive oil and a few cloves of chopped garlic. Add the poached salmon fillet that has been previously cut in small pieces. Add the leaks, the milk and heavy cream, and bring to an easy boil. Add the cooked pasta and Parmesan cheese, salt and pepper, and reduce the heat for a couple of minutes, while tossing your pasta.
