Because it contains more fiber than other popular grains like rice or even quinoa, farro is believed to have a lot of positive benefits when it comes to digestion and cardiovascular health. It’s also exceptionally high in protein for a grain and supplies more than 10 different vitamins and minerals.

So I would like to show you a quick and healthy way to incorporate it in your diet through a delicious Salmon and Kale Farro Salad. Watch the video below to find out how to prepare it.


Ingredients

1/4c. Farro cooked and set aside
Pan Seared 5oz. Salmon filet skin on
cumin, salt and pepper

For the Salad

1c. Chopped Kale
1-2 scallions
1/4c. Dates chopped
1tbs. Toasted pine nuts
1/4c. Fried onion and jalapenos (optional)
Fresh herbs on hand

For the Dressing (per your taste)

Honey
Olive Oil
Balsamic vinegar
Salt and Pepper

Cooking Instructions

1. Cook 1/4 cup of the farro and set aside
2. Chop your kale, dates and herbs.
3. In a mixing bowl toss all your ingredients with a pinch salt, pepper, olive oil and balsamic vinegar
4. Place kale salad on a plate and top with salmon and crunchy fried onions
